WHY DID THEY MAKE THE STAR WARS MOVIES OUT OF ORDER?
Well there are multiple versions of the story. We do know that episode IV was called episode IV after episode V was released.
HERE IS ESSENTIALLY A BRIEF SUMMARY OF GEORGE LUCAS'S VERSION OF EVENTS:
He thought of the whole thing... all of it, and knew it all from the beginning. Lucas started with episode IV for a few reasons, one because it was falling into the old story archetype In medias Res which has become less popular in modern story telling.
Episode IV was originally just called Star Wars, because starting out calling it Episode IV wouldn't make any sense.
This is actually the way many old stories were told. Hamlet starts out in the middle of action without any context, so does the Odyssey.
We do know that in college George Lucas read Campbell's book the Hero With a Thousand Faces it is essentially an anthropology book that says all stories fall into one of just a few archetypes. One archetype is that a protagonist becomes evil, and another one is the basic monster-killing archetype. George Lucas does seem to understand story archetypes himself, and definitely incorporated many of Campbell's archetypes into his story
George Lucas claims he originally thought of making lots of Star Wars movies, but gave up on VII VIII and IX, and decided to go back to the prequels.
HERE IS ONE OF THE OTHER VERSIONS OF EVENTS
George Lucas is lying. He didn't know anything and started calling it episode IV after he made episode V because he didn't think of prequels and anything else until after he made episode V.
George Lucas only wrote the plots for the first 3, and other people wrote the stories, almost all of them.
Lucas is also lying about planning on making Darth Vader Luke's father. Vader comes from the English word "invader", while eliminating the in-; it does not come from dearth+dark and the Dutch word for father vader. George Lucas lies a lot, so we can come up with an alternative etymology for things he claims, and then what we say is true because yeah.....
George Lucas ruined Star Wars because he didn't make IV V and VI alone, and IV V and VI were awesome, and he became big and famous, and then didn't listen to other people and wrote I II and III all on his own.
George Lucas is also very fat, ugly, ruined Star Wars, ruined India Jones, even raped Indiana Jones
MY THOUGHTS...
Minimally, George Lucas did think of it all, at least by episode V. He clearly knew to call Star Wars V "V" whether he was lying about thinking it all before episode IV or not.
George Lucas did not call it "I" after coming up with a "II" he called it "V" and the new one "VI".
George Lucas also studied some anthropology in college, and clearly knew Campbell's work as he has written on the topic. The characters of George Lucas's movies are extremely transparent, and not very deep, but in the context of the anthropology they are attempts to tell a scifi story in the same way most stories are told, but with an explicit understanding of exactly what that is (monster-slaying and good becoming evil, as well as a redemption story).
It was the ultimate stereotyping of stories and included all of the anthropological archetypes.
Not a lot of people writing a story know enough of that to write multiple basic archetypes into their work, and then make them all flow together.
IF YOU HATE IN MEDIAS RES
If you hate that style of story telling you can go watch them in this order:
I II III IV V VI
Essentially... in linear order. The story will still make sense, but the emotional roller coaster of in Medias Res won't be there.
The story will work in a logical, rather than emotional, story order.
AND IF YOU LOVE IN MEDIA RES AND WATCHING THEM IN GEORGE LUCAS'S ORDER STILL DOESN'T SATISFY YOUR IN MEIDAS RES CRAVING
Watch them in this order:
IV, V, I, II, III, VI
This will be true in Medias Res in every way. You will get up to episode V on the cliffhanger "wait?!!?! What?!?!?" and then go see I, II, and III that explain it.
